Makes: 12 cupcakes Prep time: 20 minutes Bake time: 325 degrees for 40 minutes 12 chocolate wafer cookies, crushed 8 ounces cream cheese, softened 1 cup sugar 2 eggs 1/2 cup sour cream 2 tablespoons strawberry liqueur 1 teaspoon orange zest 1/2 teaspoon vanilla extract 1/4 cup all-purpose flour pinch salt Topping: 1/2 cup sour cream 4 tablespoons strawberry jam 6 large strawberries sliced 1. Heat oven, line pan with cups and place 1 scant tablespoon crumbs in each. 2. Beat cream cheese and sugar until smooth. Add eggs and beat. Beat sour cream, liqueur, zest, and vanilla. On low beat flour and salt. 3. Spoon 1/4 cup batter in each cup, bake for 35 minutes. 4. Topping: Stir together sour cream and 2 tablespoons of the jam. Spread about 2 teaspoons of the sour cream mixture on the top of each cupcake and bake for an additional 5 minutes. 5. Remove from oven and cool in pan on wire rack for 30 minutes. Remove cupcakes to rack to cool completely. 6. Melt remaining 2 tablespoons jam. Cool slightly. Slice strawberries and fan over tops of cupcakes. Brush with melted jam. |
