Mrs. Unger's Blueberry Muffins
Ingredients:
1 cup fresh blueberries
1 tlbs. + 13/4cup flour divided.
½ cup sugar
¾ tsp. salt
1 tsp. baking powder
½ baking soda
1 tsp. nutmeg
1 egg
1 tsp. vanilla
1 cup sour cream
1/3 cup milk
Directions:
In small bowl toss blueberries with 1 tlbs flour in large bowl
combine dry ingredients set aside. In medium bowl, mix egg, sour
cream and milk. Gently stir in dry ingredients until just
combined (batter will be lumpy). Stir in blueberries just until
evenly distributed. Ladle into 2and a half inch muffin tin. Bake
at 400 for 20 min. |
